Aunt Jeanne's Dutch Pancakes

As you may know, I rarely give out family
recipes, but you are special.  Here is my
Aunt Jeanne's savory old family recipe.  
Alton Brown's recipe is sweet and can be
found under "Dutch Babies."

preheat oven to 450
(use 12 inch well seasoned cast iron or
non-stick with heat resistant handles)

melt 3 T butter in skillet, swish it around
then pour remainder into batter


In blender or with hand mixer or food
processor:

3 eggs, room temperature
1/2 cup flour
1/4 tsp salt
1 1/2 tsp sugar
1/2 cup whole milk, room temperature

Pour batter into warm skillet, bake 15
minutes at 450, then lower to 350 for 15-20
min longer, til puffy and golden.
Sprinkle with cheese and crisp bacon
crumbles or ham, heat until melted.

Serve immediately.  GREAT with
strawberry jelly!
