Cheese Blintzes
Make a batch of crepes and the filling the day
before so you can just put these together in the
morning, warm up, and serve with coffee,
mimosas (3 parts orange juice to 2 parts
champagne), and the morning news.
Place in blender and process until smooth:
1 cup cottage cheese
Add and blend until smooth:
4 ounces cream cheese
1/4 cup sugar
1 tsp vanilla
Refrigerate
Next morning, put filling on 1/4 of the crepe,
then fold in half, then in quarter. Heat skillet to
medium, toss in a little butter, and lightly fry
each blintz, turning once to get that beautiful
light brown color on the crepe. Put two on a
plate, dust with powdered sugar, and toss a few
blueberries on the side
