Dolmas - from Lu's recipe card
1 16 oz. jar of grape leaves, rinsed in cold water
1 1/4 cups port wine
1/4 cup boiling water
1 cup olive oil
4 cups finely chopped onions
1 cup pearl rice (or grain of your choice)
1/2 cup chopped parsley
1 tsp dried dill
1/2 tsp paprika
2 tsp salt
1/2 tsp pepper
1. After rinsing the grape leaves,
remove the node of the veins in the leaf
2. Saute the 4 cups of finely chopped
onions in 1 cup olive oil Add herbs
4. Place onion filling in center of grape leaf
and roll up tightly.
5. Stack dolmas on top of steamer in pot
large enough to hold the port and boiling
water.
3. Squeeze fresh lemon juice into
the onion mixture
