Kaiser Rolls
1. Dissolve 3 3/8 tsp. yeast in 1/4 cup water.
Add 1/4 cup sugar so yeast can grow.
2. Mix 1 cup beer with 1 cup water and add:
2 tsp. salt
2 whole eggs and 1 egg white.
3 .Mix into yeast misture.
4. Stir in 4 cups flour and
2 cups high gluten flour
5. Mix well
6. Knead about 7 minutes, place in oiled bowl
and let rise one hour.
7. Punch down and let rise another hour.
8. Divide into 8 - 10 pieces.
9. Form balls and let rest under damp towel (right)
10. Flatten on
well-floured surface
and rest 5 minutes
11. Form rolls according to this link and
place upside down onto oiled cookie sheet
sprinkled with poppy seeds. Rise an hour.
12. Turn right side up right before baking at        
       425 for 10 minutes (with steam), rotate pan  
       and bake another 10 minutes.
