Bill's Limoncello *


Italian sweet liqueur made from lemons &
vodka

Lemon zest:  Scrub all black (if any...!) off 10
lemons, then use potato peeler to remove      
& save yellow zest.

Vodka:  1.75 Litre bottle of 80 proof (cheap
plastic bottle okay)

Put vodka and lemon zest into a stainless
steel pot or glass container, cover but stir
occasionally for 5 days, filter off zest, stir in
2.67 cups of Baker's Sugar (range of 2.5 to
3.0 okay) until dissolved, pour back into
vodka bottle & store in freezer - makes
somewhat more than 2 Litres of 66 proof
limoncello, so there will be "extra" for
taste-testing.

* Bill is not a tired chemistry teacher, he is a
retired teacher!  Note the 80 proof humor!
