Matzos
1. Gather ingredients:
4 cups unbleached all-purpose flour
1/4 cup sesame seeds
Freshly ground pepper to taste
2 teaspoons coarse salt, plus additional for tops
1 1/2 cups warm water
2. Position rack in lower third of over and preheat to 550
Place a cookie sheet in the oven and let it heat up!
Combine flour sesame seeds and pepper, whisk to combine.  
Whisk the salt into warm water, make a well in the center of the dry
ingredients, and mix with your hands.  Dough is shaggy and little
dry, but knead until smooth, 3 minutes
3. Divide the dough into 12 pieces
Conventional wisdom is to roll it as thinly as possible, but I ran the
dough through a pasta machine, cranking it until the pieces were
so thin. Then I cut them with a dough knife.
4. Prick the dough all over with a fork,
then sprinkle top lightly with salt.  I added some Italian seasoning,
sparsely, as well.
5. Open oven door and place the crackers as quickly as
possible on the hot cookie sheet.
Bake 1 minute on a side.  Lauren Groveman says don't even think
about leaving the kitchen or answering the phone.
These are so labor intensive, even with the help of the pasta
maker, that I sometimes only make half a recipe.
