Early spring crocus by SCM
Great Meatballs from Cook's Illustrated


Stir together:

1 cup Italian seasoned bread crumbs
1/2 cup milk
1/2 cup chicken broth
3 beaten eggs
2 Tbs dried oregano
1 Tsp minced garlic
1 Tbs Kosher salt
1 Tsp ground black pepper
2  tsp dried basil
2 tsp red pepper flakes
pinch of freshly ground nutmeg

Add and shape into balls using 2 Tbs
cookie scoop:

2 pounds ground meat, any combination.  I
like half turkey and half pork.

Pour 1 cup chicken broth into bottom of 9 x 13
pan, put meatballs right into broth in pan, and
bake at 450 degrees for about 25 minutes.

These are great for sub sandwiches, in a
spaghetti sauce on noodles, or just served
cold like a meatloaf sandwich.
